Classic Blueberry Muffins
Ingredients:
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg
1/3 cup milk
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
2 tablespoons all-purpose flour (for coating the blueberries)
Instructions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Line a muffin tin with paper liners or grease with non-stick spray.
Mix Dry Ingredients:
In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder.
Combine Wet Ingredients:
In a separate bowl, beat the egg and then mix in the vegetable oil, milk, and vanilla extract.
