Instructions:
Preheat oven: Preheat your oven to 200°C (top/bottom heat).
Prepare the potatoes: Wash the potatoes thoroughly and cut them into wedges. You can leave the skin on for extra flavor and crispiness.
Season: Place the potato wedges in a large bowl. Add olive oil, chopped garlic, thyme, paprika, salt, and pepper. Mix everything well so the potatoes are evenly seasoned.
Bake: Spread the seasoned potato wedges evenly on a baking sheet. Make sure they aren’t overlapping to ensure they crisp up nicely.
Roast: Bake the potatoes in the preheated oven for about 30-35 minutes, until golden brown and crispy. Turn them halfway through the baking time to ensure even browning.
Add Parmesan: When the potatoes are almost done, remove the baking sheet from the oven and sprinkle the grated Parmesan evenly over the potatoes. Return the baking sheet to the oven and bake for another 5 minutes, until the Parmesan is melted and lightly golden brown.
Serve: Remove the potatoes from the oven and let them cool briefly. Garnish with fresh parsley, if desired.
