Here’s a rich and flavorful Mushroom Hunter’s Sauce that pairs beautifully with steak, chicken, pork, or even roasted vegetables. This sauce is inspired by classic “Jäger sauce” (Jägersoße) from German cuisine.
Ingredients:
2 tbsp butter
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 ½ cups (200g) mushrooms, sliced (cremini, button, or wild mushrooms)
½ cup (120ml) dry white wine (or beef broth for non-alcoholic version)
1 cup (240ml) beef or chicken broth
1 tsp Dijon mustard
1 tsp Worcestershire sauce
½ cup (120ml) heavy cream (or sour cream for a tangier taste)
1 tsp fresh thyme (or ½ tsp dried thyme)
Salt and black pepper to taste
1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
