Instructions:

Let the meat sit at room temperature for 1 hour before cooking.

Rub the meat with butter, then season with the spice mix.

Preheat your oven to 230°C (450°F).

Place the meat in the oven for 20 minutes to sear.

Reduce the heat to 160°C (320°F) and cook for 1 to 1.5 hours, depending on size.

2) Crispy Roasted Potatoes

Ingredients:

Potatoes, peeled and cut

Salt

Olive oil

Minced garlic (optional)

Fresh parsley (chopped)

Instructions:

Boil the potatoes in salted water for 10 minutes.

Drain them, and shake the pot to rough the edges (this makes them crispy).

Toss with olive oil, salt, pepper, and garlic.

Bake at 220°C (425°F) for 30–40 minutes, flipping once.

Sprinkle with parsley before serving.
