1 can of pineapple slices (or 2 cups fresh pineapple chunks)
1 cup heavy whipping cream
½ cup granulated sugar
1 packet (about 7g) unflavored gelatin
¼ cup cold water
¼ cup hot water
1 teaspoon vanilla extract
Optional garnish: pineapple wedges, mint leaves, whipped cream
