🥄 Instructions

1. Preheat

Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.

2. Mix Dry Ingredients

In a large bowl, whisk together:

  • almond flour

  • coconut flour

  • erythritol

  • baking powder

  • salt

  • orange zest

3. Add Wet Ingredients

In a small bowl, mix:

  • egg

  • melted butter

  • almond milk

  • vanilla

  • orange juice (optional)

Pour the wet mixture into the dry ingredients and mix until a soft dough forms.

4. Add Cranberries

Fold in the sugar-free cranberries.

5. Shape the Dough

Place the dough on parchment paper and form a round disk (about 2–3 cm thick).
Cut into 8 triangles and separate slightly on the tray.

6. Bake

Bake for 18–22 minutes, until the edges are golden.

7. Cool

Let cool fully — they firm up as they rest.

Mix:

  • 3 tbsp powdered erythritol

  • 1 tsp almond milk

  • A few drops of orange juice

Drizzle over cooled scones.
