Instructions
In a bowl, combine flour, oats, coconut, brown sugar, white sugar, baking soda, and salt. In another bowl, whisk together melted butter, egg, and vanilla extract until smooth. Pour the wet mixture into the dry ingredients and mix until combined. The dough will be slightly thick and sticky.
Scoop small portions of dough and place them on a parchment-lined baking tray, leaving space between each. Flatten slightly with your fingers or a spoon. Bake in a preheated oven at 180°C (350°F) for 10–12 minutes or until golden around the edges.
Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
