Thai Coconut Soup with Vegetables (Tom Kha Style)

 

 

🍲 Instructions

  1. Prepare the vegetables
    Wash and cut the carrots, broccoli, and mushrooms into bite-sized pieces.

  2. Cook the aromatics
    In a large pot, heat a small amount of oil over medium heat. Add onion, garlic, and ginger. Cook for 2–3 minutes until fragrant.

  3. Add liquids
    Pour in the coconut milk and vegetable broth. Stir well and bring to a gentle simmer.

  4. Add vegetables
    Add carrots first and cook for about 5 minutes, then add mushrooms and broccoli. Simmer for another 5–7 minutes until tender.

  5. Season
    Stir in soy sauce, lime juice, and chili flakes. Taste and adjust salt or spice as desired.

  6. Serve
    Ladle the soup into bowls and garnish with fresh cilantro. Serve hot with jasmine rice or on its own.
