Prepare the vegetables
Wash and cut the carrots, broccoli, and mushrooms into bite-sized pieces. -
Cook the aromatics
In a large pot, heat a small amount of oil over medium heat. Add onion, garlic, and ginger. Cook for 2–3 minutes until fragrant. -
Add liquids
Pour in the coconut milk and vegetable broth. Stir well and bring to a gentle simmer. -
Add vegetables
Add carrots first and cook for about 5 minutes, then add mushrooms and broccoli. Simmer for another 5–7 minutes until tender. -
Season
Stir in soy sauce, lime juice, and chili flakes. Taste and adjust salt or spice as desired. -
Serve
Ladle the soup into bowls and garnish with fresh cilantro. Serve hot with jasmine rice or on its own.
