White Beans Stew with Green Herb Sauce

Instructions

Make the Herb Sauce

Blend parsley + cilantro + garlic + olive oil + salt until smooth.

Set aside.

Cook the Stew

Heat olive oil in a pot.

Add the chopped onion and sauté until soft (about 5 minutes).

Add garlic, paprika, cumin, salt, and pepper. Mix well.

Add the white beans and stir for 1–2 minutes.

Pour in the vegetable broth and let it simmer for 10 minutes to thicken.

Finish

Add lemon juice.

Taste and adjust salt/pepper.

Spoon the herb sauce on top before serving.

Serving Ideas

Serve with bread, rice, or couscous.

Add grated cheese on top if you like.
