Prime Rib Roast with Crispy Potatoes and Asparagus

 

 

Instructions

🥩 1. Prepare the Prime Rib

  1. Preheat oven to 450°F (230°C).

  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.

  3. Rub the mixture all over the roast.

  4. Place the roast fat-side up in a roasting pan.

  5. Roast for 20 minutes, then lower temperature to 325°F (160°C) and continue roasting for 1 hour 30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

  6. Remove from oven, cover with foil, and let rest for 20 minutes before slicing.

🥔 2. Make the Crispy Potatoes

  1. Boil potatoes in salted water for 10 minutes, then drain.

  2. Rough up the edges by shaking them gently in the pot.

  3. Toss with olive oil, garlic powder, salt, and pepper.

  4. Spread on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping halfway until golden brown and crispy.

🌿 3. Prepare the Asparagus

  1. Toss asparagus with olive oil, salt, and pepper.

  2. Grill or roast in the oven at 425°F (220°C) for 10–12 minutes.

  3. Drizzle with lemon juice before serving (optional).

Serve

Slice the prime rib and serve it alongside the crispy potatoes and asparagus.
