Ingredients

For the Prime Rib:

  • 1 bone-in prime rib roast (about 4–5 lbs)

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 2 tsp salt

  • 1 tsp black pepper

For the Crispy Potatoes:

  • 1 ½ lbs baby potatoes (or russet, chopped)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • Fresh parsley, chopped (optional)

For the Asparagus:

  • 1 bunch asparagus, trimmed

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1 tsp lemon juice (optional)
