Boil the eggs:
Place the eggs in a pot, cover with water, and boil for 10 minutes.
Cool them in cold water, then peel and chop into small cubes. -
Prepare the egg salad:
In a bowl, mix together chopped eggs, mayonnaise, mustard, lemon juice, green onions, salt, pepper, and paprika.
Stir until everything is well combined. -
Assemble the sandwich:
Cut croissants in half horizontally.
Spoon the egg salad mixture onto the bottom half and cover with the top half of the croissant. -
