Seafood Loaded Baked Potato with 3-Cheese Sauce

🔥 Instructions1️⃣ Bake the Potatoes:
Preheat oven to 400°F (200°C).
Scrub potatoes clean, poke holes with a fork, rub with olive oil & salt.
Bake 50-60 minutes until soft inside.

2️⃣ Cook the Seafood:
In a skillet, melt butter over medium heat. Add garlic and cook for 30 seconds.
Toss in shrimp & crawfish, season with Cajun seasoning, garlic powder, and paprika.
Cook for 4-5 minutes until shrimp turn pink. Remove from heat.
3️⃣ Make the 3-Cheese Sauce:
Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
Slowly whisk in heavy cream until smooth.
Add Parmesan, Cheddar, and Monterey Jack cheese. Stir until melted.
Season with Cajun seasoning & black pepper. Keep warm.

4️⃣ Assemble the Loaded Potato:
Cut open baked potatoes and fluff the insides with a fork.
Pour cheese sauce inside the potato.
Add cooked seafood on top and drizzle with more cheese sauce.
Garnish with green onions & a sprinkle of paprika.
