Chocolate Chip Ricotta Cake

Instructions:

  1. Preheat the oven to 180°C (350°F). Grease and line a 20cm (8-inch) springform pan.

  2. Mix wet ingredients:
    In a large bowl, whisk together eggs and sugar until light and fluffy.
    Add ricotta cheese, vegetable oil, and vanilla extract. Mix until smooth.

  3. Add dry ingredients:
    Sift in flour, baking powder, and salt. Stir gently until combined.

  4. Add chocolate chips:
    Fold in the mini chocolate chips using a spatula.

  5. Bake:
    Pour the batter into the prepared pan and smooth the top.
    Bake for 40–50 minutes or until golden and a toothpick inserted comes out clean.

  6. Cool and serve:
    Let the cake cool, then dust with powdered sugar before serving.

Tip: For extra flavor, add a tablespoon of orange zest or a few drops of almond extract.
