🌶️ Sheet Pan Chicken Fajitas
Ingredients:
1.5 lbs boneless, skinless chicken breasts (or thighs), sliced into thin strips
3 bell peppers (any colors), sliced into strips
1 large red onion, sliced into wedges or strips
2–3 tbsp olive oil
Juice of 1 lime (optional, for brightness)
8 small flour or corn tortillas, for serving
Fajita Seasoning Mix:
(or use a store-bought packet)
2 tsp chili powder
1 tsp paprika
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional, for heat)
Instructions:
1. Preheat Oven:
Set oven to 425°F (220°C). Line a large sheet pan with parchment or foil for easier cleanup.
2. Prep Chicken & Veggies:
In a large bowl, toss sliced chicken, bell peppers, and onions with olive oil and the seasoning mix until everything is well coated.
3. Spread on Pan:
Arrange everything in a single layer on the baking sheet. Try not to crowd the pan too much—use two pans if needed to ensure roasting instead of steaming.
4. Bake:
Roast in the oven for 20–25 minutes, stirring halfway through, until chicken is cooked through and veggies are tender with a little char.
