Second Rise:
Cover loosely and let rise again for about 30–40 minutes, or until the dough is just above the rim of the pans.
Bake:
Preheat oven to 375°F (190°C).
Bake the loaves for 25–30 minutes, or until golden brown and the loaves sound hollow when tapped.
Optional Finish:
Brush the tops with melted butter while warm for a softer crust and a richer flavor.
Cool:
Let loaves cool in the pans for 5 minutes, then remove and cool completely on a wire rack.
