Preheat oven to 375°F (190°C). Line a baking tray with foil for easy cleanup.
Season pork chops with salt and pepper on both sides.
Sear chops in a hot skillet with olive oil over medium-high heat for 2–3 minutes per side to get a golden crust (optional but adds flavor).
Mix all sauce ingredients in a bowl.
Place seared pork chops on the prepared baking tray.
Pour the sauce evenly over the pork chops.
Bake uncovered for 20–25 minutes (depending on thickness), basting with the sauce halfway through.
Broil for 2–3 minutes at the end for that sticky, caramelized finish.
Let rest for 5 minutes before serving.
