Creamy Ground Beef & Potato Casserole

Ingredients:

500g ground beef

1 cup frozen peas and carrots

1 onion, chopped

2 tbsp tomato paste

1 tsp thyme

1/2 cup beef stock

3–4 potatoes, sliced thin

Olive oil, salt, pepper

Instructions:

Cook beef with onion until browned. Add tomato paste, thyme, and stock. Simmer.

Add peas and carrots. Season well.

In a dish, spread the meat mixture, then top with potato slices.

Drizzle olive oil, sprinkle salt and pepper.

Bake at 190°C (375°F) for 45–50 minutes.

3. Cheesy Beef & Veggie Bake
Ingredients:

500g ground beef

1 zucchini, diced

1 carrot, grated

1/2 bell pepper, chopped

3 potatoes, boiled and sliced

1 cup cream or béchamel sauce

1 cup shredded cheese

Instructions:

Sauté ground beef with all veggies until soft. Season with salt, pepper, and herbs.

In a dish, layer potatoes, then beef/veggie mix, then a bit of cream. Repeat layers.

Top with shredded cheese.

Bake at 180°C (350°F) for 30–40 minutes until bubbly and golden.
