Prepare the sausage: Heat olive oil in a large pot over medium heat. Add kielbasa slices and cook until browned. Remove and set aside.
Sauté vegetables: Sauté chopped onion in the same pot for about 3-4 minutes until softened. Add chopped garlic and sauté for about 1 minute until fragrant.
Add broth and vegetables: Pour in chicken broth. Add diced potatoes, sliced carrots, and chopped celery. Stir in dried thyme and parsley. Season with salt and pepper.
Simmer: Bring to a boil, then reduce heat and simmer for about 20 minutes, until potatoes and carrots are tender.
Finish soup: Stir in cream and return kielbasa to the pot. Simmer for another 5 minutes, or until heated through.
