Set your oven to 180°C (350°F).
Prepare the chicken:
Pat the chicken dry with paper towels.
Rub with olive oil, paprika, garlic powder, onion powder, oregano, salt, and black pepper. Set aside.
Prepare the rice:
In a large ovenproof dish, heat butter or olive oil over medium heat.
Sauté the chopped onion until soft, then add the garlic and cook for another 30 seconds.
Stir in the rice, salt, pepper, and turmeric (if using), mixing well.
Pour in the chicken broth and mix.
Assemble the dish:
Place the seasoned chicken thighs on top of the rice (skin-side up).
Cover the dish tightly with foil.
Bake:
Bake covered for 30 minutes.
Remove the foil and bake for 20-25 more minutes until the chicken skin is crispy and golden brown.
Let it rest for 5 minutes before serving.
