Crispy Smashed Potatoes Recipe
Ingredients:
500g (1 lb) small potatoes (baby potatoes work best)
3 tbsp olive oil
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
½ tsp dried oregano or thyme
¼ cup grated Parmesan (optional)
Fresh parsley, chopped (for garnish)

Boil the Potatoes
Preheat your oven to 220°C (425°F).
Place potatoes in a pot of salted water and bring to a boil.
Cook for 15-20 minutes until fork-tender, then drain.
Smash the Potatoes
Line a baking tray with parchment paper.
Place the boiled potatoes on the tray and gently smash them using the bottom of a glass or a fork.
Season & Bake
Mix olive oil, garlic, salt, pepper, paprika, and oregano in a small bowl.
Brush the mixture over the smashed potatoes.
Sprinkle with Parmesan if using.
Bake for 20-25 minutes until crispy and golden.
Garnish & Serve
Remove from oven, sprinkle with fresh parsley, and enjoy!
