Cheesy Mashed Potato Muffins
Ingredients:
3 cups mashed potatoes
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1 egg
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup cooked and crumbled bacon
2 tbsp chopped chives
Extra cheese and bacon for topping

Preheat the oven to 375°F (190°C). Line a muffin tin with cupcake liners or grease it well.
Mix mashed potatoes, cheese, sour cream, egg, garlic powder, salt, and pepper in a bowl.
Spoon the mixture into the muffin tin, filling each cup to the top.
Top with extra shredded cheese, crumbled bacon, and chopped chives.
Bake for 20-25 minutes or until golden and slightly crispy on the edges.
Cool for a few minutes before serving. Enjoy!
