1 cup shredded mozzarella cheese

1/8 teaspoon black pepper
1 tablespoon chopped fresh dill
2 tablespoons canola oil

1. Combine all ingredients (except the oil) in a large mixing bowl.
2. Heat the canola oil in a large cast iron or nonstick skillet over medium-high heat.
3. Add the chicken mixture a heaping tablespoon at a time, flattening with the back of a spoon as it enters the pan.
4. Cook for 4 minutes, then flip and cook for another 2 minutes on the second side.
5. Serve with your favorite dipping sauce.
