First, preheat your oven to 375°F (190°C). This ensures the temperature is just right when you’re ready to cook the meatloaf.
In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, salt, black pepper, and Italian seasoning.
Mix the ingredients with your hands or a spoon until well blended, but be careful not to overwork the meat to prevent the meatloaf from becoming too dense.
Place the meat mixture in a greased loaf pan and form into an even loaf. Spread a thin layer of ketchup over the meatloaf for a flavorful glaze that will caramelize as it cooks.
Place the pan in the oven and bake for about 45–55 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
While the meatloaf is baking, prepare the mashed potatoes. Place the peeled and chopped potatoes in a large pot and cover with water.
Bring the water to a boil and boil the potatoes for about 15–20 minutes, or until tender when pierced with a fork. Drain the potatoes and return them to the pot.
Add butter, milk, sour cream, salt, and black pepper to the potatoes. Use a potato masher or hand mixer to mash the potatoes until smooth and creamy.
If you prefer a fluffier texture, you can add a little more milk to achieve your desired consistency.
When the meatloaf is done, remove it from the oven and let it rest for a few minutes before slicing. This allows the juices to redistribute, ensuring each slice is moist and flavorful.
Sprinkle the mashed potatoes with grated cheddar cheese and place them under the broiler for about 2-3 minutes, or until the cheese is melted and bubbly. You can also sprinkle some fresh parsley on top for a pop of color and flavor.
