1. Preheat your oven to 200°C (400°F). Line a baking dish with parchment paper or foil.
2. Season the salmon fillets with salt and pepper, then place them in the baking dish.
3. In a small bowl, combine melted butter, minced garlic, lemon juice, and dried parsley. Brush the salmon generously with the garlic-butter mixture.
4. Top each fillet with a layer of sautéed spinach. Sprinkle mozzarella and Parmesan evenly over the top.
5. Bake for 12–15 minutes, or until the salmon is cooked through and the cheese is melted and golden brown.
6. Garnish with fresh parsley and serve with lemon slices.
