1. Preheat your oven to 200°C (400°F). Line a baking dish with parchment paper or foil.
2. Season the salmon fillets with salt and pepper, then place them in the baking dish.
3. In a small bowl, mix together melted butter, minced garlic, lemon juice and dried parsley. Brush the salmon generously with the garlic butter mixture.
4. Top each fillet with a layer of sautéed spinach. Sprinkle mozzarella and parmesan evenly on top.
5. Bake for 12-15 minutes or until the salmon is cooked through and the cheese is melted and golden brown.
6. Garnish with fresh parsley and serve with lemon slices.
