Juicy Steak with Creamy Garlic Sauce

1. Heat olive oil and butter in a skillet over medium-high heat. Season the steaks with salt and pepper.
2. Sear the steaks for 3-4 minutes per side for medium-rare, or cook to your liking. Remove the steaks and set aside to rest.
3. Add minced garlic to the same pan and sauté for 30 seconds until fragrant.
4. Reduce heat and add cream and stock. Stir in Dijon mustard, thyme, salt and pepper. Simmer the sauce for 3-4 minutes until slightly thickened.
5. Return the steaks to the pan and spoon the sauce over the top. Let warm for 1-2 minutes.
6. Serve steaks with the creamy garlic sauce and garnish with fresh parsley.
