Instructions:
Preheat oven to 375°F (190°C). Grease a muffin tin.
Mix mashed potatoes with all ingredients.
Fill muffin cups, pressing down slightly.
Bake for 20 minutes or until crispy on the edges.
Let cool and serve warm.
3. Bacon & Chive Mashed Potato Muffins
Ingredients:
4 cups mashed potatoes
1 cup shredded cheddar cheese
½ cup crispy bacon bits
¼ cup chopped chives
½ cup milk
2 eggs
Salt & pepper to taste
