Marinated Tomatoes with Mozzarella

1. Prepare tomatoes and mozzarella:
o Cut the vine tomatoes into ½-inch-thick slices.
o Cut the mozzarella into bite-sized pieces.
2. Prepare the marinade:
o In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey (if using), finely chopped red onion, minced garlic, parsley, basil, salt and black pepper.
3. Marinate the tomatoes:
o Arrange the tomato slices in a shallow bowl or on a platter. Pour the marinade over the tomatoes, making sure they are well covered. Let marinate at room temperature for about 20-30 minutes.
4. Add the mozzarella:
o Just before serving, add the diced mozzarella to the tomatoes and gently toss or spread evenly.
5. Garnish and serve:
o Garnish with additional fresh parsley and basil. Serve as a side dish, appetizer or refreshing salad.
