Marinated Tomatoes with Mozzarella
Ingredients
• 4-5 vine tomatoes, cut into ½-inch-thick slices
• 1/3 cup (85 ml) extra-virgin olive oil
• 2 tablespoons balsamic vinegar
• 1 tablespoon honey (optional)
• 2 tablespoons finely chopped red onion
• 1 large garlic clove (or two small cloves), finely minced or crushed
• 1 tablespoon chopped fresh parsley, plus more for garnish
• 1 tablespoon chopped fresh basil, plus more for garnish
• 1 (16 oz.) roll fresh mozzarella cheese, cubed
• Salt and freshly ground black pepper to taste
