Instructions:
Make the potato pancakes: In a large skillet, fry the frozen potato pancakes according to package directions until golden brown and crispy. Once cooked, remove from the pan and set aside.
Sauté the vegetables and sausage: In the same skillet, fry the sliced chicken or turkey sausage over medium heat until browned. Add the diced bell peppers and onions and saute until the vegetables are soft and the sausage is fully cooked.
Toss ingredients: Once the sausage and vegetables are cooked, add the crispy potato dumplings back to the pan. Sprinkle Italian seasoning, salt, and pepper over the mixture and stir gently to combine.
Add cheese: Add shredded cheese to the pan and evenly cover the potato dumplings and sausage. Reduce heat to low, cover pan, and let cheese melt for about 3–5 minutes.
To serve: Once the cheese is melted and bubbly, remove pan from heat. Garnish with fresh parsley if desired and serve warm
