Instructions:
In a large bowl, soak the chicken in buttermilk for at least 2 hours (or overnight for best results).
Prepare the Coating:
In a separate bowl, mix flour, salt, black pepper, paprika, garlic powder, cayenne pepper, and baking powder.
In another bowl, beat the eggs.
Coat the Chicken:
Take a piece of chicken from the buttermilk, dip it into the flour mixture, then into the beaten eggs, and again into the flour mixture for a double coat.
Fry the Chicken:
Heat oil in a deep pan to 170°C (340°F).
Fry the chicken pieces for 12-15 minutes, turning occasionally until golden brown and fully cooked.
Drain on paper towels.
