What to do

1. Lightly spray or grease a baking sheet and set the oven temperature to 375°F (190°C).

Finely chop the shrimp and toss with chives, garlic, soy sauce, sesame oil, and black pepper in a bowl. Stir until combined.

3. Gently dip a rice paper wrapper in warm water for about ten to fifteen seconds, or until it becomes slightly pliable—but not too soft. – before using. Place on a damp, clean dish towel.

4. Place about a spoonful of the shrimp filling in the bottom of the rice paper, making sure to leave enough room around the edges and bottom.

5. Spread the mixture evenly over the wrapper, then roll it up tightly, like a small burrito.

6. Place the dumplings seam-side down on the preheated baking sheet. Continue with the remaining filling and wrappers.

7. Spray the dumplings with cooking spray or brush lightly with olive oil. This will help you get a nice oven fire!

Place the dumplings in the oven and bake for 20 to 25 minutes, or until golden brown and crispy. Towards the end of the baking time, be careful not to overbake the cookies and destroy their delicate texture.

9. Remove from the oven, place on a rack to cool, and after a few minutes, garnish with the dipping sauce of your choice.

Tips and Variations: If you’re looking for a vegetarian alternative, replace the shrimp with finely grated tofu or a combination of your favorite vegetables, such as cabbage and shiitake mushrooms.

– A If your kids don’t like chives, you can also simply replace them with scallions, which are milder, or use finely chopped spinach, which is also a delicious green alternative.

– A For a delicious combination of sweet, sour and salty flavors, try this great dipping sauce recipe: Combine a touch of honey with soy sauce and a squeeze of lime.

– A To save time, you can use pre-cooked shrimp or grated carrots from the supermarket.

– A Handling the rice sheets individually and moistening them briefly with a cloth can help prevent them from sticking or tearing.

– A Finally, get the whole family involved in making these dumplings! When the little ones join in on the rolling and dipping fun, there’s something for everyone at dinner.
