Slow Cooker Sausage & Peppers
Ingredients:

6 Italian sausages (mild or spicy)
1 onion, sliced
2 bell peppers (red and yellow), sliced
2 cloves garlic, minced
1 can diced tomatoes (optional)
1 cup chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt & pepper to taste
Instructions:

Brown the sausages in a skillet for a few minutes.
Add the onions, peppers, and garlic to the slow cooker.
Place the sausages on top and pour in the broth and tomatoes.
Sprinkle Italian seasoning, red pepper flakes, salt, and pepper.
Cook on low for 6 hours or high for 3 hours.
Serve with rice, pasta, or in a sandwich roll.
2. Sausage & Peppers Pasta
Ingredients:

4 Italian sausages, sliced
1 onion, chopped
2 bell peppers, sliced
3 cloves garlic, minced
1 can crushed tomatoes
1 tsp oregano
1/2 tsp chili flakes
250g pasta (penne or spaghetti)
Parmesan & fresh basil for garnish

Cook the pasta as per package instructions.
In a pan, cook the sausages until browned. Remove and set aside.
In the same pan, sauté onions, peppers, and garlic.
Add crushed tomatoes, oregano, and chili flakes. Simmer for 10 minutes.
Add the sliced sausages back in and let it cook for another 5 minutes.
Toss with pasta and top with Parmesan & basil.
3. Sausage & Peppers Sandwich
Ingredients:

4 Italian sausages
1 onion, sliced
2 bell peppers, sliced
1 tbsp olive oil
1 tsp balsamic vinegar
4 hoagie rolls
4 slices provolone cheese
Instructions:

Grill or pan-fry the sausages until fully cooked.
In a separate pan, sauté onions and peppers in olive oil until soft. Add balsamic vinegar for extra flavor.
Toast the hoagie rolls and place a sausage inside each one.
Top with sautéed peppers and onions, then add a slice of provolone cheese.
Broil for 2 minutes to melt the cheese. Enjoy!
