Ingredients:
4 bone-in, skin-on chicken thighs (or drumsticks)
1 ½ cups long-grain rice (like basmati or jasmine)
2 ½ cups chicken broth (or water)
1 cup diced tomatoes (canned or fresh)
1 small onion, finely chopped
3 garlic cloves, minced
1 tsp smoked paprika
1 tsp sweet paprika
½ tsp salt
½ tsp black pepper
½ tsp dried oregano
½ tsp cumin (optional for extra depth)
1 tbsp olive oil
1 tbsp butter (for extra richness)
Fresh parsley or green onions for garnish

1️⃣ Preheat Oven: Set to 190°C (375°F).
2️⃣ Season Chicken: Rub chicken with olive oil, smoked paprika, sweet paprika, salt, and pepper.
3️⃣ Sear the Chicken: Heat a pan over medium-high heat, sear chicken skin-side down until golden (about 3-4 minutes per side). Remove and set aside.
4️⃣ Sauté Aromatics: In the same pan, melt butter and cook onions and garlic until soft. Stir in rice, oregano, and cumin. Toast for 1 minute.
5️⃣ Assemble the Bake: Transfer rice mixture to a baking dish. Add chicken broth and diced tomatoes, mix well, then place chicken on top.
6️⃣ Bake: Cover with foil and bake for 30 minutes. Then, remove foil and bake for another 20-25 minutes until the chicken is crispy and rice is tender.
7️⃣ Garnish & Serve: Sprinkle with fresh parsley or green onions.
