Instructions:
Preheat Oven: Set to 190°C (375°F).
Season Chicken: Rub chicken with olive oil, smoked paprika, sweet paprika, salt, and pepper.
Sear the Chicken: Heat a pan over medium-high heat, sear chicken skin-side down until golden (about 3-4 minutes per side). Remove and set aside.
Sauté Aromatics: In the same pan, melt butter and cook onions and garlic until soft. Stir in rice, oregano, and cumin. Toast for 1 minute.
Assemble the Bake: Transfer rice mixture to a baking dish. Add chicken broth and diced tomatoes, mix well, then place chicken on top.
Bake: Cover with foil and bake for 30 minutes. Then, remove foil and bake for another 20-25 minutes until the chicken is crispy and rice is tender.
Garnish & Serve: Sprinkle with fresh parsley or green onions.
