Mexican White Trash Casserole
Ingredients:
1 lb (500 g) ground beef (or mixed)
1 onion, diced
1 can corn (about 10 oz / 285 g)
1 can black beans, drained
1 can diced tomatoes with chilies
1 packet taco seasoning
1 cup sour cream or crème fraîche
2 cups shredded cheddar or Tex-Mex cheese
1 bag tortilla chips (about 5 oz / 150 g)

Brown the meat: In a large skillet, cook the ground beef with the diced onion until browned and crumbly.
Add seasoning and filling: Stir in corn, black beans, diced tomatoes, and taco seasoning. Let simmer for about 5 minutes.
Layer it up: Grease a baking dish and spread a layer of crushed tortilla chips at the bottom. Add the beef mixture on top.
Cream & cheese: Evenly spread the sour cream over the meat layer, then sprinkle with cheese.
Bake: Preheat oven to 350°F (180°C) and bake for 20–25 minutes until the cheese is melted and golden.
Serve: Garnish with fresh jalapeños, cilantro, or an extra dollop of sour cream.
