Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts (or thighs)
1 small onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup milk
1 can (10.5 oz) cream of chicken soup
1 teaspoon dried thyme
1 teaspoon dried parsley
½ teaspoon salt
½ teaspoon black pepper
1 cup frozen peas and carrots (optional)
For the Dumplings:
1 can refrigerated biscuit dough (or homemade biscuit dough)
½ teaspoon garlic powder (optional)
½ teaspoon dried parsley (optional)

Add chicken breasts, onion, garlic, chicken broth, milk, cream of chicken soup, thyme, parsley, salt, and pepper to the crockpot.

Shred the Chicken:
Remove the cooked chicken and shred it with two forks.
