2 medium potatoes, thinly sliced
6 eggs

1 small onion, diced
1 bell pepper, chopped
1 zucchini, grated (or any veggie you like!)
½ cup cherry tomatoes, halved
½ cup shredded cheese (cheddar, mozzarella, or feta)
1 tbsp olive oil
½ tsp salt & black pepper
½ tsp dried oregano (or Italian seasoning)

1️⃣ Preheat oven to 375°F (190°C). Grease a baking dish or oven-safe pan.
2️⃣ Sauté the potatoes: Heat olive oil in a pan, cook sliced potatoes until slightly golden. Add onions and cook until soft.
3️⃣ Whisk the eggs: In a bowl, beat eggs with milk, salt, pepper, and oregano.
4️⃣ Combine everything: Add bell peppers, zucchini, tomatoes, and half the cheese to the egg mixture. Stir well.
5️⃣ Transfer to a baking dish: Spread the potatoes at the bottom, then pour the egg mixture on top. Sprinkle the remaining cheese.
6️⃣ Bake for 20-25 minutes or until set and golden on top.
