Instructions:
Prepare the Coconut Filling:
In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix well to ensure the coconut is fully coated.
Shape the coconut mixture into small rectangular bars and place them on a baking sheet lined with parchment paper. Customize the size according to your preference.
Chill the coconut bars in the refrigerator for at least 30 minutes to firm them up for easier chocolate coating.
Melt the Chocolate:
Create a water bath by placing the chocolate chips in a heatproof bowl over a pot of simmering water. Stir until the chocolate is completely melted and smooth.
Alternatively, melt the chocolate in the microwave in short intervals, stirring between each until fully melted.
For a smoother chocolate coating, add coconut oil to the melted chocolate and mix well.
Coat the Bars:
Dip each chilled coconut bar into the melted chocolate using a fork. Allow excess chocolate to drip off before placing the coated bar back on the parchment-lined baking sheet.
Repeat the process for each bar, reheating the chocolate gently if it starts to solidify.
Once all bars are coated, refrigerate the baking sheet to allow the chocolate to harden (15-20 minutes).
