Ultra-Creamy Hummus
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed (or 1 1/2 cups cooked chickpeas)
1/2 cup tahini
1/4 cup fresh lemon juice (about 1 large lemon)
1/4 cup extra-virgin olive oil, plus more for serving
2-3 cloves garlic, minced
1/2 teaspoon ground cumin
1 teaspoon salt
2-3 tablespoons cold water
1/4 teaspoon baking soda (if using canned chickpeas)
Paprika, chopped fresh parsley, and olive oil for garnish
Instructions:
Prepare the Chickpeas:

If using canned chickpeas, add them to a small saucepan with the baking soda and cover with water. Bring to a boil and let simmer for about 10 minutes to soften further. Drain and rinse with cold water. If using cooked chickpeas, ensure they are very soft.
