Crispy Persian Rice (Tahdig) Recipe

Ingredients:
2 cups basmati rice
4 tablespoons salt
4 tablespoons butter or ghee
1/4 cup vegetable oil
1/4 teaspoon saffron threads, ground and dissolved in 2 tablespoons hot water
1 large potato, thinly sliced (optional)

Preparation:
Rinse the rice under cold water until the water runs clear. Soak the rice in a large bowl with 4 cups of water and 2 tablespoons of salt for at least 1 hour.
Parboil the Rice:
Bring 8 cups of water and 2 tablespoons of salt to a boil in a large pot. Drain the soaked rice and add it to the boiling water. Cook for about 5-7 minutes until the rice is partially cooked but still firm. Drain and rinse with cold water to stop the cooking process.
Prepare the Pot:
In a non-stick pot, melt the butter with the oil over medium heat. If using, place the potato slices in a single layer at the bottom of the pot. This will form the crispy layer.
