Lumpia (Filipino Spring Rolls)
Ingredients:
For the Filling:
1 lb ground pork
2 medium carrots, grated
1/2 head of cabbage, finely shredded
1 medium onion, finely chopped
3 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon ground black pepper
Salt to taste
1 egg, beaten
1 package lumpia wrappers (spring roll wrappers)
For Frying:
Vegetable oil for frying
For the Dipping Sauce:
1/4 cup soy sauce
1/4 cup vinegar
1 tablespoon sugar
1 clove garlic, minced
Chili pepper (optional), finely chopped
Instructions:
Prepare the Filling:

In a large bowl, combine the ground pork, grated carrots, shredded cabbage, chopped onion, minced garlic, soy sauce, ground black pepper, and salt. Mix well until all ingredients are evenly distributed.
Add the beaten egg to the mixture and mix well to bind the ingredients together.
Assemble the Lumpia:

Lay a lumpia wrapper on a flat surface. Place about 2 tablespoons of the filling near one corner of the wrapper.
Fold the corner over the filling, then fold the sides over and roll tightly into a log shape. Moisten the edge with water to seal. Repeat with the remaining wrappers and filling.
Fry the Lumpia:

Heat about 2 inches of vegetable oil in a deep frying pan or pot over medium-high heat.
Fry the lumpia in batches, turning occasionally, until they are golden brown and crispy, about 3-5 minutes per batch.
Remove the lumpia from the oil and drain on paper towels.
Prepare the Dipping Sauce:

In a small bowl, combine the soy sauce, vinegar, sugar, minced garlic, and chopped chili pepper (if using). Stir until the sugar is dissolved.
Serve:

Serve the lumpia hot with the dipping sauce on the side.
