Here’s a delightful recipe for a soft butter cake, perfect for any occasion:
Soft Butter Cake
Ingredients:
1 cup (230g) unsalted butter, softened
1 1/2 cups (300g) granulated sugar
4 large eggs, room temperature
2 1/2 cups (315g) all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup (240ml) whole milk, room temperature
2 teaspoons vanilla extract
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 8-inch round cake pans.
Prepare the Batter:
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
Bake the Cake:
Pour the batter into the prepared pan(s) and spread it evenly. Tap the pan gently on the counter to remove any air bubbles.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool the Cake:
Allow the cake to cool in the pan(s) for about 10 minutes. Then, remove the cake from the pan(s) and transfer it to a wire rack to cool completely.
Serve:
Once cooled, you can frost the cake with your favorite frosting, dust it with powdered sugar, or serve it plain.
Optional Vanilla Buttercream Frosting:
Ingredients:
1 cup (230g) unsalted butter, softened
4 cups (480g) powdered sugar
1/4 cup (60ml) heavy cream
2 teaspoons vanilla extract
Pinch of salt
Instructions:
In a large mixing bowl, beat the butter until creamy.
Gradually add the powdered sugar, mixing on low speed until combined.
Add the heavy cream, vanilla extract, and salt. Increase the mixer speed to high and beat until the frosting is light and fluffy, about 3-5 minutes.
Spread the frosting over the cooled cake.
Enjoy your soft and buttery cake!
